Before the battle, the Samurai, even those fighting among themselves, gathered in the small house of Ensintei for a ceremonial tea party. Matcha was for concentration, and hay for vivacity. We took a more expressive green sencha, added some sourness with goji berries and got an incredibly balanced taste in Japanese style.
